Ingredients
Chicken(I used a mix of thighs and drums) - 6nos (Bone-in, skin-on)
Cilantro, finely chopped - 1/2 cup
Garlic, minced - 3 pods
Cumin powder - 1 tspn
Cayenne pepper - 1/2 tspn (Optional)
Salt - to taste
Olive oil - 1 tblspn
Zest and juice of 2 large Limes
Method
To prepare the marinade, combine the chopped cilantro, garlic, cumin powder, cayenne pepper, salt, olive oil, lime zest & juice in a large bowl.
Add the chicken pieces to the marinade and coat well. Marinate for 2hrs or up to overnight.
Preheat the oven to 425F.
Heat an oven safe skillet over medium heat. Once the skillet is hot, add the chicken, skin side down. Cook for 3-4min or until the skin is browned.
Flip over the chicken pieces. Transfer to the oven and cook for 35min or until fully cooked through.
Garnish with additional cilantro and lime wedges. Serve hot.
