Ingredients:
Chicken(I used 3 drums and 2 thighs, bone-in, Skin-on) - 1.5lbs
Lemon juice - 3 tblspn
Dijon mustard - 2 tblspn
Cayenne pepper - 1.5 tspn (optional)
Garlic, minced/paste - 1 tspn
Olive oil - 1 tblspn
Salt - To taste
Pepper - To taste
Method:
Prepare marinade by mixing together all the ingredients, except the chicken.
Add in the chicken and coat the chicken thoroughly in the marinade.
Let sit in the refrigerator for at least 2hrs (overnight marination would be even better).
Preheat the oven to 400F.
Place the chicken piece, skin side up on a lined baking sheet and bake for 35-40min, or until the chicken is completely cooked.
Set the oven to broil and broil for 2-3min, if you like the charged, crispy skin.
Serve hot alongside a salad and some bread.
