Ingredients
Butter - 1/2 cup
Flour - 125gm
Powdered Sugar - 42gm
Salt - A pinch
Vanilla extract - 1/2 tspn
Cashews, roughly chopped - 2 tblspn
Sultanas, roughly chopped - 2 tblspn
Cardamom, ground - 1/2 tspn
Method
Sift together the flour and salt.
Cream the butter and sugar until light and fluffy.
Add the vanilla extract and ground cardamom. Mix well.
Fold in the sifted flour mixture.
Add in the cashews and sultanas. Do not overmix.
Wrap the prepared cookie dough in plastic log ang shape into a log.
Chill the dough in the refrigerator for about 1hr.
Divide the dough in ~25gm portions. Shape as desired.
Transfer back to the fridge for 20min.
In the meantime, preheat the oven to 350F.
Transfer the chilled cookies to the preheated oven.
Bake for 12-15min or until lightly brown.
Serve with a cup of tea/coffee.
