Phirni



Ingredients:

  1. Full fat milk - 1ltr

  2. Basmati Rice - 75gm

  3. Sugar - 70gm

  4. Salt - a pinch

  5. Cardamom powder - 1 tspn

  6. Saffron - 4 ( or to taste)

Method:

  1. Wash and soak the rise in water for about 30min.

  2. After 30min, drain off the water and let the air dry.

  3. Once the rice is dry, transfer to a blender/spice grinder and grind to a coarse powder. Do not turn it into fine powder.

  4. In a heavy-bottom saucepan, bring 750ml of milk to boil. Add in the saffron strands.

  5. Add the rice to the remaining 250ml milk. Stir together.

  6. Add the rice mixture to the boiling milk. Continue to cook on medium heat, stirring continuously, until rice is fully cooked.

  7. Once the rice is cooked, add in the sugar. Also add the cardamom powder and salt.

  8. Keep cooking until the mixture is of desired consistency. Neither too runny nor too thick.

  9. Transfer to a shallow bowl. This dish is best served cold.
