Ingredients
Chia seeds - 3 tblspn
Corn flakes/Granola - 2 tblspn
Blueberry preserves - 2 tblspn
Salt - a pinch
Sweetener of choice - To taste (I used Monk Fruit sweetner)
Water - 1/2 cup
Milk - 2 tblspn
Method
Divide the chia seeds in 2 bowls.
Add 1/4 cup of water into each of the 2 bowls. Also, add the 2 tblspns of milk into one bowl. Set aside for 30min(preferably in the refrigerator).
Mix in a tblspn of blueberry preserves into each of the 2 bowls. Also add in the sweetener and a pinch of salt(optional).
To assemble the pudding, Add a layer of corn flakes/granola into to the serving glass/bowl.
Top with the chia seed layers as desired(Just be creative).
Garnish as desired. I used a sprig of mint and some coconut flakes.
