Blueberry Chia Pudding

Ingredients

  1. Chia seeds - 3 tblspn

  2. Corn flakes/Granola - 2 tblspn

  3. Blueberry preserves - 2 tblspn

  4. Salt - a pinch

  5. Sweetener of choice - To taste (I used Monk Fruit sweetner)

  6. Water - 1/2 cup

  7. Milk - 2 tblspn

 

Method

  1. Divide the chia seeds in 2 bowls.

  2. Add 1/4 cup of water into each of the 2 bowls. Also, add the 2 tblspns of milk into one bowl. Set aside for 30min(preferably in the refrigerator).

  3. Mix in a tblspn of blueberry preserves into each of the 2 bowls. Also add in the sweetener and a pinch of salt(optional).

  4. To assemble the pudding, Add a layer of corn flakes/granola into to the serving glass/bowl.

  5. Top with the chia seed layers as desired(Just be creative).

  6. Garnish as desired. I used a sprig of mint and some coconut flakes.
