Chicken quesadilla

Ingredients

  1. Chicken(Cooked chicken also works)

  2. Taco seasoning

  3. Cabbage - 1/2 cup (chopped into small pieces)

  4. Bell pepper - 1/2 cup (chopped)

  5. Onion - 1/2 cup (chopped)

  6. Tortilla - 4

  7. Mexican cheese blend

 

Method

  1. Heat oil in a pan on medium heat.

  2. Add chicken along with taco seasoning. Add salt to taste if using salt free seasoning. You can also do the same with leftover cooked chicken or rotisserie chicken.

  3. Once the chicken is cooked, add cabbage and continue cooking for 30sec. Turn off the flame and set aside.

  4. Heat a pan on medium heat.

  5. Place 1 tortilla. Cook on one side for 20sec and turn over.

  6. Add the cooked chicken, bell peppers and onions to one half of the tortilla.

  7. Top it up with cheese.

  8. Fold over the other half of the tortilla. Continue cooking, turning occasionally until the cheese is completely melted and the tortilla is slightly browned.

  9. Repeat with remaining tortilla.
