White Chicken Chili



Ingredients

  1. Cooked shredded chicken - 2 cupu(Add upto 2.5 cups, depending on preference)

  2. Canned green chili - 4oz

  3. Yellow Onion, chopped - 1 small

  4. Garlic, minced - 3 nos

  5. Green chilies in can - 4oz

  6. Cumin powder - 1/2 tspn

  7. Cayenne pepper - 1/2 tspn

  8. Dried oregano - 1/2 tspn

  9. Salt - to taste

  10. Pepper - to taste

  11. Cannellini beans - 1 can

  12. Chicken broth - 400 ml

  13. Red bell pepper, chopped - 1/2-3/4 cup

  14. Lime - 1

  15. Cream cheese, room temp - 2 tblspn

  16. Mexican cheese blend - 1/4 cup

  17. Cilantro - for garnish

  18. Oil - 2 tspn

Method:

  1. Heat a soup pot/ Dutch oven over medium heat.

  2. Add 2 tspn of oil.

  3. Sautee onion and garlic for a couple minutes.

  4. Add in the oregano, cumin and cayenne along with the canned green chilies. Cook the spices for a couple minutes.

  5. Add in the chicken broth and season with salt and pepper.

  6. Bring the mixture to a boil and simmer for 10-15min.

  7. In the meanwhile, drain and rinse the beans.

  8. After 15min, add in the rinsed beans, chopped bell pepper and the shredded chicken and cook for an additional 10min.

  9. Stir in the juice from 1 lime(Do not add all at once. Add gradually, taste and adjust), 1 tblspn of softened cream cheese and mix everything really well.

  10. Garnish with chopped cilantro and top with mexican cheese blend while serving.
