Ingredients
Cooked shredded chicken - 2 cupu(Add upto 2.5 cups, depending on preference)
Canned green chili - 4oz
Yellow Onion, chopped - 1 small
Garlic, minced - 3 nos
Green chilies in can - 4oz
Cumin powder - 1/2 tspn
Cayenne pepper - 1/2 tspn
Dried oregano - 1/2 tspn
Salt - to taste
Pepper - to taste
Cannellini beans - 1 can
Chicken broth - 400 ml
Red bell pepper, chopped - 1/2-3/4 cup
Lime - 1
Cream cheese, room temp - 2 tblspn
Mexican cheese blend - 1/4 cup
Cilantro - for garnish
Oil - 2 tspn
Method:
Heat a soup pot/ Dutch oven over medium heat.
Add 2 tspn of oil.
Sautee onion and garlic for a couple minutes.
Add in the oregano, cumin and cayenne along with the canned green chilies. Cook the spices for a couple minutes.
Add in the chicken broth and season with salt and pepper.
Bring the mixture to a boil and simmer for 10-15min.
In the meanwhile, drain and rinse the beans.
After 15min, add in the rinsed beans, chopped bell pepper and the shredded chicken and cook for an additional 10min.
Stir in the juice from 1 lime(Do not add all at once. Add gradually, taste and adjust), 1 tblspn of softened cream cheese and mix everything really well.
Garnish with chopped cilantro and top with mexican cheese blend while serving.
