Ingredients
a. For the cake
All Purpose Flour - 300gm
Coconut Flour - 60gm
Baking Powder - 6gm or 1 1/2 tspn
Salt - 1 tspn
Coconut milk - 1cup or 236ml
Butter - 225gm (Room temp)
White granulated sugar - 450gm or 2 1/4 cup
Vanilla extract - 1tsp
Egg whites - 4
Coconut flakes - 1-2cups (For decoration and to sprinkle in between layers)
b. For the frosting
Unsalted butter, softened - 500 gms
Condensed milk - 1 can
Melted dark chocolate - 1/2 cup
Salt - 1/2 tspn
Method
a. For the cake
Preheat oven to 350F. Prepare 3 six in cake pans.
In a glass, combine coconut milk and vanilla extract. Mix together all the dry ingredients in a separate bowl.
Cream the butter until fluffy and light in color.
Gradually add sugar. Continue mixing in medium speed until light and fluffy.
Add the dry ingredients in thirds, alternating with the coconut milk mixture.
In a separate bowl, whisk egg whites until stiff peaks form.
Fold egg whites into the batter until just combined.
Divide the cake batter between the 3 prepared pans.
Place in the oven a bake for around 30-40min.
b. For the frosting
In a bowl, whip the softened butter until very light and fluffy, around 8-10min.
Gradually add condensed milk and salt.
Add the melted chocolate and mix well.
