Ham & Cheese Omelet



Ingredients

  1. Eggs, large - 2

  2. Ham - 3-4 slices

  3. Cheese(I used a Mexican cheese blend) - 2 tspn

  4. Salt - To taste

  5. Pepper - To taste

  6. Parsley/ Spring onion - for garnish

  7. Oil - 1/2 tspn

Method

  1. In a bowl, beat the eggs with a splash or water(or milk) along with salt and pepper to taste.

  2. Heat a pan over medium heat. Add oil.

  3. Once the pan is almost hot(Do not overheat), add in the egg mixture. Move the egg around with a spatula to create ribbons as the egg cooks.

  4. Once cooked on one side, flip over.

  5. Cook on other side for 30sec.

  6. Flip over once again. Place the ham and cheese on on half of the prepared omelet and fold the side half over.

  7. Garnish with parsley/ spring onion. Serve hot.
