Italian Sausage and Cheese Baked Egg



Ingredients

  1. Egg - 4 nos

  2. Italian sausage - 1 link, casing removed

  3. Onion, finely chopped - 1/4 cup

  4. Bell pepper, finely chopped - 1/4 cup

  5. Butter - 1/2 tblspn + 1/2 tspn for the ramekins

  6. Salt - to taste

  7. Pepper - to taste

  8. Cheese(I used a Mexican cheese blend) - 1/4 cup

  9. Parsley, chopped - for garnish

 

Method:

  1. Preheat the oven to 350F.

  2. Heat a Sautee pan over medium heat.

  3. Cook the Italian sausage(I usually dont use any oil for this step). Set aside.

  4. Add 1/2 tblspn of oil into the same pan. Sautee the onion and bell pepper for a couple minutes.

  5. Add the prepared sausage back into the pan and mix well to combine. Check and adjust seasoning.

  6. In the meanwhile, melt 1/2 tspn of butter and use it to butter the ramekins you are going to bake the eggs in.

  7. Crack 4 eggs into a bowl. Season with salt and pepper. Whisk the eggs.

  8. Add in the cheese and the prepared sausage mix.

  9. Mix well.

  10. Divide the mix between 2 ramekins and transfer to the oven. Bake for 15min.

  11. Increase the oven temp to 400F and cook for additional 10-15min or until the eggs are done.

  12. Garnish with parsley and serve immediately.
