Ingredients
Egg - 4 nos
Italian sausage - 1 link, casing removed
Onion, finely chopped - 1/4 cup
Bell pepper, finely chopped - 1/4 cup
Butter - 1/2 tblspn + 1/2 tspn for the ramekins
Salt - to taste
Pepper - to taste
Cheese(I used a Mexican cheese blend) - 1/4 cup
Parsley, chopped - for garnish
Method:
Preheat the oven to 350F.
Heat a Sautee pan over medium heat.
Cook the Italian sausage(I usually dont use any oil for this step). Set aside.
Add 1/2 tblspn of oil into the same pan. Sautee the onion and bell pepper for a couple minutes.
Add the prepared sausage back into the pan and mix well to combine. Check and adjust seasoning.
In the meanwhile, melt 1/2 tspn of butter and use it to butter the ramekins you are going to bake the eggs in.
Crack 4 eggs into a bowl. Season with salt and pepper. Whisk the eggs.
Add in the cheese and the prepared sausage mix.
Mix well.
Divide the mix between 2 ramekins and transfer to the oven. Bake for 15min.
Increase the oven temp to 400F and cook for additional 10-15min or until the eggs are done.
Garnish with parsley and serve immediately.
