Ingredients
Rusk/ Lady finger biscuits - 15-20 nos
Cream cheese - 250gm
Whipping cream - 150gm (1/2 cup + 2 tblspn)
Powdered sugar - 60gm
Vanilla extract - 1 tspn
Bailey(Irish cream liquor) - 3 tblspn
Instant espresso powder - 1.5 tblspn
Water - 1cup
Coffee liquor - 1/4 cup
Sugar - 1.5 tblspn
Cocoa powder - 2-3 tblspn
Method
Brew some espresso with boiling water, instant espresso powder, sugar and the coffee liquor(ingredients 7-10). Set aside, bring to room temp.
Beat together the room temperature cream cheese and 30gm powdered sugar until fluffy.
Add the whipping cream and 30gm of powdered sugar to a bowl. Whip until soft peaks form.
Add the cream cheese mixture to the whipping cream. Also add in the Irish cream liquor(optional).
Mix until very well combined and set aside.
Dip the rusk/biscuits in the coffee mixture and lay them on the bottom of an 8*8 dish.
Dust a layer of cocoa powder on top.
Pipe in the tiramisu cream and use a spatula to spread it evenly, to form the second layer.
Repeat steps 6-8.
Cover and refrigerate for at least 4hrs or up to overnight.
Dust the top surface with cocoa powder before serving.
