Vanilla Birthday Cake

3 layers of 6-inch vanilla funfetti cake with vanilla frosting





Ingredients


a. For the cake

  1. All purpose flour - 213 gm

  2. Baking powder - 1 tspn

  3. Baking soda - 1/4 tspn

  4. Salt - 1 tspn

  5. Butter - 176gm or 3/4 cup (Room temp)

  6. White granulated sugar - 1cup or 200 gm

  7. Egg whites - 3

  8. Vanilla extract - 2 tspn

  9. Milk - 120mL or 1/2 cup

  10. Greek yogurt - 120mL or 1/2 cup

  11. Sprinkles - 1/2 cup

b. For frosting

  1. Butter - 500 gm

  2. Condensed milk - 1 can

  3. Vanilla - 2 tspn

  4. Salt - 1/4 tspn

 

Instructions


a. For the Cake

  1. Preheat oven to 350F. Prep 3 6-inch round cake pans

  2. Mix together flour, baking soda, baking powder & salt.

  3. Mix together the milk, Greek yogurt and vanilla extract.

  4. Cream butter and sugar in a bowl until pale and fluffy.

  5. Add egg whites one at a time, mixing thoroughly between each addition.

  6. Add the dry ingredients, alternating with the milk-yogurt mixture.

  7. Mix just until fully combined.

  8. Bake at 350F for 30-35min or until a skewer inserted in the center of the cake comes out clean.

b. For the frosting

  1. Cream the butter in the bowl of a stand mixture for about 8-10min.

  2. Gradually add condensed milk while mixing.

  3. Add salt and vanilla extract.
